This BBQ Tofu Black Bean Salad is a vibrant mix of smoky, zesty, and creamy flavors that come together in a bowl full of plant-based goodness.

Protein-rich tofu is seasoned with our BBQ tofu seasoning and tossed with wholesome black beans, crisp spinach, juicy tomatoes, and cool cucumber—all served over a bed of nutty brown rice.

And the best part? A tangy cashew crema drizzled on top that brings everything together with a creamy, citrusy finish.

Whether you're meal-prepping for the week or making a quick weeknight dinner, this salad is packed with flavor and nutrients!

INGREDIENTS:

Cashew Crema for dressing

  • 1 cup raw cashews
  • 1 Lemon juiced
  • 1 Lime juiced
  • 1/2 Cup water
  • 1 Tbs Salt

DIRECTIONS:

  1. Press the tofu and remove excess moisture.
  2. Cut into cubes and add some oil and BBQ seasoning
  3. Add liquid aminos or soy sauce if desired.
  4. Air-fry or bake the tofu for 20 min.
  5. In the meantime, cut veggies and ration out black beans and rice.
  6. Add spinach to each plate; add tomatoes, cucumber, beans, and baked tofu.
  7. Dress with the cashew crema or your dressing of choice.
